Ground up 5 lbs of this seasons deer for snack sticks. Keeping it simple using ac legg 116 blend. Fired up the MES 40 initially but it seems to be having and issue so i fired up the weber and limped through it at around 180° offset with hickory. Pulled them at 145° and finished in the dehydrator. They got a nice dark color on the weber. Turned out pretty good.

I did add a half pound of pork fat. So it actually came out to like 5.46 lbs total. The casings are 21mm Lem brand. They are kida fat. Like hot dog sized.
 
Yea dont get me wrong i love my webers but the Mes has been superior for doi g sback sticks...that is until it decidedto not read correct temperatures. I like to acclimate the sticks a like 110 degrees for and hour and then bump up to 130° with smoke and up it 10° every 45 to an hour till i get to 175 180 and let them reach 152°. I can maintain 180-190 on the weber but thats about as low as it functionally goes. The sticks turned out good so im still happy.
