Snack Sticks, cooked fat?

Can you use fat from a cooked brisket in the mix for snack sticks? Fairly new to this smoker thing but I've cook my share of ribs already and a few full packer briskets. Want to try my hand at some snack sticks next and wondered if I could use the seasoned trimmings from a cooked brisket.
