Fired up the BiG Chief just before noon. It topped out at 174 before I loaded it with snack sticks. Since I have loaded her down it tops out at about 140. They have been on about 3 hours now and are at 120 IT. I probably should move them to the oven to finish?

Going to get a MES 140 for the next time.

What was the old electric smoker that broke down?
If it was an old MES40 you can do a simple rewire and slap on a PID controller and make it 50x better than a MES 140 or any new smoker Masterbuilt makes.
Also doing that costs less money too :)

Just sayin.

Hope I'm not to late.. but do not move them to oven... 174` is perfect.. you don't want any higher than that.. just let sticks ride until 152` IT ... I have found that it takes venison longer than pork...
