Snack Stick problems

So I got a batch of LEM snack sticks going right now, I put them in the smoker around 7 this morning, and its after 5 PM and some of the sticks are not never above 130F, is this normal??? that's almost going on 12 hours and its still not even close. plus another thing is, I checked a couple sticks and they are up to 140F so there's uneven heating in my MES, I heard of there being hot spots in the smoker in the right corner above the smoke box but from the sticks I checked, it showed that there was a couple spots that had this problem then.  I think I'm pulling them out and finishing them in the oven, I just never had luck with snack sticks

What smoking temp are you using and do you have a verified accurate therm?...JJ
 
Well, this is a "day late" from the look of when the OP was made, but be careful with sticks in the oven.  A lot of ovens cannot go low enough and if the temp is too high, you risk fat out and affecting the meat texture in a negative way. 

I suspect the MES may be reading it is at the set temp on the display, but the MES is notorious for not having accurate readings.  I would take a known accurate thermometer and compare the rack readings on the various racks to see 1) is the MES display correct, and 2) what is the temp difference for each rack (and also check sides, center, front, back etc...). If you know the difference between the displayed temp and the actual temp you can compensate for it.

So let us know how it turned out (and don't get discouraged - if it failed, learn what happened and you will just be that much better at it on the next go round).
