I am kinda freaking out about smoking 2 birds and 2 half hams for thanksgiving dinner... I have a MES 40 and my birds average 13-15 lbs, hams are 6-8 lbs... Thought about doing a low and slow on the turkeys around 220-225 to an IT of 165.... Hams I will put on for about 5 hours?? (I assume)... Am I right/wrong??.... Any help/suggestions will be greatly appreciated...
 
If you want crispy skin you will need to finish the turkeys in the oven, or smoke them at a higher temp.  I would smoke at a high temp for both the turkeys and the hams.  That way you can enjoy the skin. By high I mean 325.  Good luck either way and post pictures.
