I have watched a few videos of individuals smoking skirt steak for fajitas. I bought some skirt steak and want to give it a go. Any tips to keep if from truning into jerky? I plan on keeping the cooking temp low and maybe finishing the meat on the grill if necessary.

I'm in the smoke and reverse sear camp.

I mostly use my MES these days for skirts and flanks. I generally will smoke at a low temp around 220 until I get an IT of 115 and then a quick sear on the grill until 125 and then a short rest. I keep the seasoning simple usually just spog. For smoke I use char/hickory dust in the tube.
 
The trick is to get a good temp reading on the very thin cut. IMO, it's always better for the temp to be under vs over on skirts. BTW: outside skirts are better than inside versions. Trouble is finding them since they are usually snarfed up by restaurants and chains. Personally, I'd smoke 'em as low a temp as you can before heading to the grill.
 
Cook hot and fast over mesquite and red oak burnt down to cools . Cook with lid off or open .
Make sure the surface is dry before going over the fire , and build it large enough to cover the whole steak . That's Chuck pectoral , whole cook took about 20 minutes . Skirt will be less . The wood gives it good smoke flavor .

Results of the maiden voyage with smoking skirt steak…

I seasoned the skirt steak with some Meat Church’s fajitas seasoning (decent). I rolled the meat back up and wrapped it in plastic wrap and placed it in the fridge overnight. The next day, I built a small fire and smoked the meat at 215-225ish. At the 2-hour mark, I temped the meat and it was 140F. I removed the skirt steak and seared both sides on a hot gas grill. Each side was seared for 30-40 seconds.

My initial concern was it was going to be like beef jerky or closer to an old leather boot. I was pleasantly surprised. It was juicy, had a good smoke flavor, and the searing helped to render the fat a bit and give it a good appearance. Family gave it high marks. Thank you for all of the help!
