I was going to make my pulled pork a week in advance of the party I am having. Anybody else ever done this? If so how did you save it? I was figuring on freezing it in 1 gallon freezer bags? Any help would be appreciated.
 
Sounds like a plan.  How do you intend to warm it?  I would place it in a crock pot with a bit of finishing sauce to reheat.  
 
I use an electric smoker so I was going to just reheat in there. Not sure I can use the crock pot. I will have too much to reheat.
 
Reheating it in the smoker is fine.  You will need to thaw it out the day before, put it in a foil pan and add finishing sauce.

A few days frozen in a Ziplock should be short enough that there should be no worry on freezer burn.
