Sorry new here. I tried search function but was not finding what I was looking for.

I'm curious about smoking a smaller pork belly above a much bigger pork soundeds in my MES.

At first it seemed like a good idea but the more I've thought about it it, I was worried the fat drippings would cause the rub to come off the pork shoulder/prevent a good bark from forming? Though the belly will finish hours sooner, so maybe just fine?

Anyone have experience or advice on this?

Thanks!

No issue at all. I routinely smoke Ribs over Butts or Chicken over Butts. Once the Butt surface dries, not much rub gets washed away. Unlike spritzing, the dripping fat essentially Fries the Bark making it crisper...JJ

I would think that all it will do is increase the goodness...

When I do pork butts and brisket together, I always put the butts on top and let them drip on the beef. I have never noticed any negative effect on the brisket rub or bark.
