My in-laws went hunting and got a mess off pheasants. We're thinking about smoking for Easter dinner.any body got any good recipes for doing so? From what I've read you want to do a brine but idn. Any help would be appreciated

Hi there!

I love pheasant cacciatore! A simple idea but also healthful and great if you like that kind of thing.

(You can smoke or grill or roast your pheasant and/or just cook it right in your cacciatore sauce even but either way, it's just lovely)!

Make sure you brine it and don't overcook it. I haven't smoked one, but I've roasted, grilled and stewed quite a few. My favorite I've done was a miniature turducken made of a pheasant stuffed with a Chuckar (smaller game bird, type of partridge). It was surprisingly easy and tasty.

I called it a "little phuckar", but I guess it's not nice to say that in polite company. The bacon wrapping helps too.
