Hello Guys, my 1st post. I am smoking my first brisket. I had the brisket cooking for about 4 1/2 hours when I woke up to notice the fire got low. The fire temp was fluctuating 250-300 before I took a 2 hour nap. When I woke up the fire was really low (below 100). I panicked at got the fire going quickly and then checked the internal temp which was at 150 degrees after fire was back on for 10 minutes.
The internal temperature had to have been in the 135-145 range once I found it(panicked and didnt check right away). Im guessing that the fire temperature was low for about an hour.
Do you guys think that it will be safe to consume the brisket once it is cooked?
