Hey all! Looking for advice from experts:

This weekend is the first time weather in middle TN will be above freezing for the last few months. Got a cabelas electric smoker, made by master built.

Deer steak and roast sliced and marinating in teriyaki and pepper mix, but I know this smoker won't get above 150 degrees tomorrow. I aim to keep it at 120 and leave out the water pan. Thoughts??

Safe zone is above 140.. it needs to be cured if below that temp
