New to smoking....meat, but a long time griller and indoor cooking. Live in an old settlement on the Ohio River, eight miles upstream from the confluence with the Mississippi, in southern Illinois in a beautiful little place named America......in 1818.
Just purchased Ok joe offset smoker and have started the mods. Made a quicky charcoal basket one morning to get started and it worked well Saturday...manion method. Also have a Weber kettle and Weber Q 200, and Weber Q100 baby.
This forum is really a great place to learn a lot and is a lot of help with the folks who have already been down the frustration road and enjoy making their smoker turn out great meat. I have a shop I will doing most of the mods in. I am a retired civil engineer and farmer.
Still in the planning stage on mods and what I want to do. Also, plan on playing around making charcoal this winter. I have a good supply of hickory, pecan and black cherry and other hard woods.
