Smoking BBQ in Southern WI

I am a practicing cardiologist from southern WI, and a BBQ enthusiast.

I have been studying BBQ for the past 8 years, including through books, television shows, in-person classes, BBQ threads and masterclasses.

So far, I have been practicing smoking whole briskets, chickens- whole, half and thighs, whole turkeys, whole green hams, pork shoulder and both pork and beef ribs. I have also tried beef plate ribs several times.

I want to learn form everyone I can, and try to get better each time I cook.

At this point, I have smoked on the XL BGE, Weber smokey mountain, Stumps XL baby gravity feed, a Cookshack electric smoker, the RecTeq Road Warrior, a Gateway drum smoker and a Yoder YS 1500s, which I am now selling due to space issues.

I will need your help as I venture into my new goals of trying whole hog, trying wild smoked meats, obtaining my first stick burner and trying some competitions. We have a registered KCBS team called Power Chord BBQ.

Hi! What sticks burner did you get?
Meadow Creek has some nice Pig roasters.
Some are on trailers , depending on how much you want to expand your kitchen!?

Practicing Cardiology and Bbq at the same time seems a paradox of sorts but again welcome and you will find very friendly folks here all willing to share knowledge and experience. Enjoy.

Oh and we have no imagination so we really like pictures of discussion.

I think that we are likely to find out over the next few years that meat from local sources, with seasoning, is far better for us than a lot of the processed food we have been used to. I hope there will be a surge in the beef, pork and poultry industries, with cleaner feeds for the animals.
 
Wow, considering how much you had to study to become a cardiologist, I can't imagine how much information you've accumulated over 8 years studying bbq. 🤯

Good luck with your competition! I usually only feed family and close friends. Can't imagine putting my bbq experiments out for strangers to judge.

I do not have a stick burner yet, so any suggestions are welcome. I like the idea of a trailer-mounted stick burner, but that could also present storage problems and limit my options if I decide to change stick burners.

I will check out Meadow Creek.

Does anyone do whole hog on a santa maria grill?

Thanks for the response. Hopefully with cooking and eating great BBQ, no statins will be needed.

We study for 11 years after college is completed for cardiology, but I think learning BBQ is a lifelong commitment.

If you want to LEARN a stick burner... Build it from scratch ... As I did here... I can't help you out on a choice of stick burners since this is the only one I've had... There are getting to be a lot of choices out there...

I love doing comps... it's a good time ...

But anyways... Welcome to your new addiction... SMF .

I love your build. It looks amazing, and so do those ribs. I do want to learn stick burner management, so doing a bukd from scratch is a great idea.

After cooking around 10 whole hog, I don't recommend it.
Yeah it looks romantically traditional putting a whole hog carcass on the spit or grate. In reality with out some skilled heat management, you overcook and destroy the belly, ribs, and loin waiting for the shoulder and rump to cook out. All of the major portions I pointed out have drastically different cook times

I love your profile photo. Are you a Maiden fan? I have seen them several times, and the first time I could not hear them, as the German metal band Accept ruptured my left eardrum before Maiden came out. Power Chord BBQ was meant to represent heavy metal music as an extra ingredient when cooking.

I've seen the boys MANY times!Will be seeing Bruce solo this September and by then the North American dates for Maiden should be announced for 2026 and rumor has it Anthrax may be the opener.Lots of shows this Summer including Pantera and Volbeat that I'll be seeing.Speaking of Accept I got to see Udo at a local club a few months back and at 72 he still has it.
