For some reason, the skin shriveled up and peeled off most of the meat as I was smoking it. What caused that?

Welcome to SMF! We really need more info like temps and how you cured it etc. A picture would help if you have one.
As Woodcutter says , send Q-view... you may not have dried the skin enough to keep it from wrinkling...
but why worry about the skin it makes you puff-up .
