That is a very nice setup you have there....I don’t own a restaurant - this is at my house , a second kitchen.
How long do you run the meat in the buffalo chopper? Guys at the firehouse tried one when they do their annual boston butt cook of 600-700 butts. Did not work very well...
LOL! They nixed the pulling....started just selling the butts whole. It's an annual fundraiser for the Firefighters Association. Takes care of supplemental costs...coffee at the stations, extra personal gear, etc....They should stick to fighting fires.
