several days ago some one posted about the smoke flavor not staying with his smoked salt and pepper corns( and I can not seem to find the O post). seems the flavor just up and was gone, and he and the rest the posted to his thread seemed to be at lose about why this happened.
He also had q-views of the salt/pepper on his smoker. it was stting on tin foil on top od the smokin grates and looked to hace a lip around the foil.
So.
How about using window screen to set the small particles on I think they make stainless steele screen and aluminum screen. I have not looked are searched yet. but I believe the have industrial screen in s/s that is used for filters in the oil fields ect.
Now if any one goes to the hardware store and gets them selves some window screen to smoke on.CAREFULL where I grew up they installed screen that was impregnated with poison for the no seeums. make sure you do not get this kind.
anyway, the screen would work much better letting the smoke kiss it all around even the pepper corns. I think the pepper corns cracked (which you can buy) would come out tasting smoked alot better then the whole corn. but not sure as I have not tried this as yet.But, boy don't it look good on paper lol..
