Just wanted to say hello, My Name US Eddy.  I live in Loganville, GA. from NJ though. I guess as the years have gone by I have given into some of the Southern lifestyle. Being from the North East where  BBQ, Smokin and most southern things as you can guess are few and far between...For example to me a BBQ pork sandwich, BBQ pork or anything BBQ including ribs included are covered in sauce. So I know for some of you this is against the rules..

Anyway I have come to enjoy smoked meats so my Wife and kids bought me a Brinkman Chimney style smoker for Fathers day. I followed the book because i had no clue on any of it, cured it ( which sounded wierd to me ) and then went on yesterday to smoke my first butt...i think it went well I liked it everyone else too. Only problem I had was keeping temp up. it was staying put at about 150 degrees. I added charcoal played with the vents but couldn't get it to around 175 where i read was about where it should be. I let it cook longer so I knew it was ready....so any suggestions would be great any tips or some of your favorite recipes.

What were you measuring temps with? You probably should have been smoking at 225*-250*, 175* is kind of low. A good accurate thermometer is a good thing to have. need a good book with lots of ideas, recipes and tips any suggestions? this smoking thing is pretty cool. !!!!!! I have done a pork butt ( a little dry ) Bacon covered meatloaf ( came out real nice ) Tri tip ( great tasting a little dry though and this week ribs ( moist and tasted great ) My Wife and kids are afraid of weekends now...
