   I have come away with rubber on the outer layer of the chicken legs the last two times I smoked it, while the inner meat is tasty and very moist. I take the skin off before smoking and have been cooking it at around 275. I use a water pan as well. I appreciate any tips on how to remedy this.

The best way to have good skin , however , is to use higher heat (300*F or so ) or finish on a Grill direct .
