I was smoking some pork ribs and a pastrami today so I made up a homemade bbq sauce
And threw in in the smoker along with the meats. This sauce was just off the cuff but it turned out excellent.
I only have one pic of it in the smoker because I was watching the Montana griz game (go griz) on my tablet and did not want to turn it off, sorry I’m funny that way:)) Anyways I made this in my blender then transferred it to a pie pan (max surface area) once the smoker was going good I placed the pan in with the meats, and stirred it every 15 min or so. It was amazing to see the color transformation and taste the building of the smoke flavor.
It took about 4 HR @ around 110 to 120 Deg. But, yes, it was exactly what I was looking for.
If anyone is interested here is the recipe.
SMOKEY HONEY MANGO BBQ SAUCE
6 oz can tomato paste
1 TBL brown sugar
3 TBL granulated honey
1/4 cup white vinegar
2 tsp salt
1/2 tsp gran garlic
1/2 tsp gran onion
1/2 tsp Dearbol or cayenne
1 tsp paprika
1/4 tsp ground gloves
1/4 tsp ground allspice
2 tsp amchur (powdered mango)
3 TBL tamarind pulp
Water as needed to blend properly
The granulated honey could be replaced with liquid honey, the amchur could be replaced with
Fresh mango, but the tamarind pulp is essential to the success of this recipe IMHO.
Smoke as above or try it your own way, this was just a experiment on my behalf which I thought turned out very well.
