Just today I recieved my new master built electric smoker - fired it up and preseasoned it. When it first started I got a lot of black/dark smoke that really did not smell good at all. But I thought that was normal burning off bad stuff. After wards the smell went away and all seemed good. SO I set the temp, put in my wood chips (hickory) and proceeded to add my chicken...a half hour later again with the foul (no pun intended) dark smoke.......any hints...I'm very new at this what am I doing wrong?
 
Did you burn the smoker out at max temp for a couple hours ???  could be it is not totally clean....    Hickory chips.... maybe too many ?? About 1/4 cup is all that is needed.... then add more after all the smoke is gone..... about 45 min to 1 hour.....  Dave

yeah thanks, I did fire it  up at full temp to preseason it and such...but I am going to go and do it again tonight just to make sure. the chicken did turn out pretty good but it burned a little bit....live and learn
