Hello, 40 year old guy from the Syracuse Ny area. I have been travelling a fair amount for work, and make it a point now to try smoked brisket wherever I go. Luckily my time in the Southern states has shown me I need to learn more, which brought me to this site. I have a smoker I have been not using quite right for a couple of years. Thank you all already for the knowledge I have quickly been gaining!!!

Welcome to the site!! The south certainly has some great Que, but so do other areas of the US. The neat thing (IMO) is that different areas have their own "take" on what makes great Que so they are all a bit different.

You are right, though, there is a lot to learn. Fortunately, it is a fun journey and hobby where you can eat your mistakes.
 
Master built gas model. 230 I think. I am the only person in the house that appreciates the smoked meats, so I got a small guy. Sad but true. Don’t pick on me, I am learning!!!
