Our team has been experimenting with different smoked whiskeys for some time at our distillery, Corsair. I have always loved smokey Scotch and never understood why there were so few American smoked whiskeys. Below is a list of the wood types I have been experimenting with. This is really more for folks who love whiskey AND grilling/smoking. If anyone can think of other woods for smoking I have not thought of please tell me, thanks in advance.

I see this is your first post here, when you get a minute would you do us a favor and go to Roll Call and introduce yourself so we can get to know you and give you a proper welcome, also would you add your location to your profile, we like knowing where you are when we talk to you, Thanks!

I would bet that any of the fruit woods would be a great addition to a whiskey - apple and peach would be at the top of my list.  Not sure how it would taste, but you're missing allspice wood (might find it as pimento) from the list. You can find that at http://pimentowood.com/Pimento_Wood/Pimento_Wood.html    Also, http://www.fruitawoodchunks.com   might have some fruit woods you're missing.  Oh - Jack Daniels also makes chips and chunks.  You'd end up with whiskey smoked whiskey!  Be sure to send samples as payment for my ideas if you use them

Thanks, I have smoked with the pimento wood, it was listed as jamaican pimento wood. It is a really great wood. Thanks for the internet link, I appreciate it.

I love sherry cask aged whiskey, so maybe the cabernet barrels might make it interesting.  Or smoke the grains in maybe cherry and age it in the wine barrels.
