Looks good!

What temp were you smoking at?

If you go higher.. around the 350 range it won't take nearly as long, and the skin will crisp up better.. or go low and slow for a bit and crank it up at the end

I usually use boneless, skinless thighs.

I aim to keep the temp between 200 and 300 on the thermo on the lid. I haven't bought a probe yet

Fair enough.. just know that the gauges on the lids of any smoker are known for being wildly inaccurate.
