It was nice and cold this morning (6º) so it got me thinking I should cold smoke something. 6 am and I head out to the grocery store for cheeses (great time to shop I see).
I ended up with some:
Colby
Longhorn Colby
Provolone
Mozzarella
Fresh Mozzarella
Bacon Cheddar
Pepperjack
String Cheese
Mild Cheddar
Cream Cheese
Butter
Took a quick look at Mr T's Smoked Cheese from show to go thread
Cut the chunks in half and loaded up the smoker.
By this time it was in the mid 20's outside so I filled the AMNPA tube with some Apple pellets and closed the door, for the first two hours it leveled off at 54º I checked it at that point and flipped everything over & pulled off the eggs I had in off.
When I closed the door the air movement must have been enough to ignite the AMNPS because the temperature shot up to 73º and then leveled off again so I left it. I had the high alarm set at 78º.
I let it go for another hour and 10 minutes and pulled all the cheese out.
I rested it on the counter for 1/2 hour and then in the fridge for a couple hours.
Then I sealed it all and filled a crisper drawer in the fridge.
My plans are to let it sit a day or two and then try the fresh Mozzarella, butter and cream cheese and not try the rest for a couple weeks.
