Smoked Scottish eggs

I hadn't done these for awhile, very easy to make with few ingredients- semi soft boiled eggs-2 pounds of Jimmy Dean sausage( 1 reg. and 1 hot) and a rub of your choice.

Mix the sausage together well and form meatballs ,I like to flatten the meatballs out like shaping a pizza dough crust before adding the egg.

All rolled in the rub and headed to the smoker.

Out of the smoker after a 3 hour nap with cherry chips at 225*.(One missing :) )

Need to do again. Just had a timeline come up on my photos, made these 2 yrs ago yesterday. I get the hint. Yours look great.

These look good! I want to make em! I had a question for you, how long did you boil the eggs?

Unfortunately my wife did these and cooked them completely. I like to do them for 5-6 minutes(semi-cooked) and they continue to cook in the smoker.
