Smoked Sausage - Temps?

In an attempt to get a better idea of what temp my Traeger would run on the lowest “Smoke” setting, I’m doing some beef jerky today.

For the first 1.5 hours, the pit temp was running good between 145-165*. Then, it did jump up to around 175*. Fortunately, it has not gotten above 179* in the last 45 minutes.

I feel better about being able to do sausage on the Traeger. Yes, running lower would be ideal, but this seems like a good start at this point.

I’m using my iGrill2 for the temps. It’s about 12* outside today, and I do have the insulated blanket on the Traeger.
