Part of rib roast from Christmas. Smoked for 90 minutes than sear on grill.

Looks great, I have done several on my Weber performer, took about 3 hrs or so to reach 125 ,I have to hit my wifes with the hot side to drive the red out, she was raised that red was raw, cant get it out of her and tired of pissing her off trying to convert lol
