Well you've been gone for a while, but you came back with a beauty. That looks delicious. Points from me for this one!
 
This is one of our all time favorites, also known as cochinita pibil. I've got a big ol' hunk of piggy in the freezer and the banana leaves. I even have the sour orange juice. I think this will go on the menu next week.

I've done that recipe a couple of times in the slow cooker & it turns out great (although I cut back on the cloves, not a big clove fan).
I have wondered if smoking would work. Looks like it will. That lime juice variation sounds good. Nice job.

This is about the best looking Puerco Pibil I've ever seen around~ outstanding job FiU! Eaten a lot of it in my life and the lime juice variation is better as far as I'm concerned. All good tho, and if you like it, well, heck...you like it.

Banana leaves are springy and thank your assistant for the pic. Good job on the step-by-step, by the way. Nicely done.

Wait? Where did it go? This recipe looked fantastic and my Mom just got 50 pounds of pork chunks from Omaha Steaks... I was going to make this, now I'll have to wing it!
