Hello All,



Trying something new.  We like to try smoking lighter fare to counteract all of the fat foods that we smoke.  So today I am going to try and smoke some Portobello Mushroom Pizza's 





I started by cleaning the "gills" out of the mushrooms.



Then tossed them in the smoker to smoke for 15-20 minutes to reduce the moisture content and tenderize them.




















While they cook, I am prepping the pizza toppings.

Ok, So I changed it up a bit.  I left the shrooms on for 30 minutes.  Then let them sit on a cooling rack for 10 minutes.

Coated them with some garlic infused Olive Oil (homemade)



Loaded them up with chicken sausage, sauce, and some cheese.  Keeping it simple for my first attempt at this.


On to the Pit for 10 minutes or until the cheese is melted and tanned from the smoke.  Using Cherry wood today.

If there to moist maybe a few toothpick holes could help extra moisture drain, I do that with my stuffed shrooms.
 
Ok, they are done!




They were good and flavorful.  They were a bit over powered by smoke, next time I think I will add a chunk of wood when I put them back on with the fixings, and cook the mushrooms over just charcoal in the beginning.

They were a bit too wet, but not bad.  I like B-One's idea of the toothpick holes.  The other thing I will do is reduce down my sauce, and let the moisture of the mushroom thin it out.

Over all I will call it a success for a hair brained idea that I thought of while flying home today.....

They look tasty,my wife likes the idea as well!
My wife liked them as well.  Very healthy and if someone is diabetic it is a great substitution for dough.
