Decided to see how smoked Pistachios would turn out. Started with pre roasted, lightly salted. Decided to toss them in a roughly a 1/2 tsp of Japanese Tsuru Bishio aged soy, roughly 1 tsp local wildflower honey, and 1 packet of "True Grapefruit", a freeze dried grapefruit powder where 1 packet is supposed to equate to 1 wedge. Smoked at roughly 225 with white oak for about 25 minutes, single layer, stirred at 25, then left in closed Smokin-It #1 with heat off but wood still smoking thin and blue. Pulled 30 minutes later. Started with roughly 1.5 cups since it was an experiment. Will do again! The glaze on the shells and the citrus addition reminded me of roasted Turkish lemon pistachios. Anyway, start and finish:

Love it . I used to do them a lot , but it's been awhile . St. Louis has a potato chip called " Red hot riplets "
They started selling just the seasoning , so that's what I use . sweet heat type of thing .
Nice work on those .

not so expensive.

My Daughter used to get them for me at Sam's . Huge bag for the price of the small bag you get at the regular grocery store . Gonna have her look at Costco .

Love pistachios. These look really good! I've smoked almonds, peanuts, and cashews. Never did pistachios. One of my favorites is spraying butter flavored oil on peanuts. Dusting with Franks powder. And smoking with hickory for an hour or so.

I need to look into that!
It's a popular local made potato chip , then branched out into other stuff , like the seasoning .
They have a sauce too , but I haven't had that .
You can get it on Amazon , not sure how regional it is .
