We are doing a Guiness brined turkey this year, so we decided to brine some legs and wings to smoke and collect the drippings for some gravy. 3.5 hours in the MES40 with a mix of hickory and apple wood with some bourbon barrel char.

Brine has some apple cider in it, so why not some apple, hickory goes well with that and well, bourbon goes with everything.

Thanks guys, had the smoker since this time last year and still learning. Finally getting to the point of honing my smoking game vs learning my smoker.

These started out at 225, went for about two hrs and bumped the smoker up to 275 to help extract some delicious drippings.
 
Very nice looking bird parts, I wouldn't mind eating a plate of those.
