John, when they talk about Sandhill's being the Ribeye of the sky, they haven't tasted Speck's.Unfortunately I never got an opportunity to hunt Whitefront/Specklebelly Geese. The Canada is the dominant goose here in Pennsylvania. I did have several opportunities to hunt Snow Geese and found them to be delicious as well.
Goose is an acquired taste as is most wild game. When people say that something tastes "gamey" it usually is because it is an unfamiliar taste to them. If you never tasted a chicken and had it for the first time, it would probably taste "gamey" to you as well. Geese for the most part eat grasses and grains. . .How could that possibly make them taste bad?

They taste like steak unless they are massacred, and they hunt the calls like Greenhead's....they are so fun to hunt, and there isn't a better eating wildfowl on the planet. I've served it to many people they said that they hate ducks and geese and every single one has raved about it and request my Speck poppers at parties and BBQ's, I kill a lot of them just for that reason, they are by far the Ribeye of the sky!!!

PS. I'm going after them, in a few hours I got an invite to a multimillion dollar club in the Sac. Valleys Butte Sink near Colusa CA for Saturday to give duck and goose calling lessons, I'm stoked. I won't sleep until I get home, I'm so excited!!!!!!!
