I want to smoke some eggs for a batch of pickled eggs in a spicy habanero, jalepenjo garlic brine .My thoughts are 4 hr cold smoke using amazn tray with both ends lit to really get a lot of smoke to penetrate the shell on the eggs prior to boiling and pickling. I have read a bunch of threads on smoking eggs and it seems 50/50 on smoking before or after boiling but i did not see any where it was mentioned they were cold smoked….thoughts, words of advice, links??

I feel like a little smoke goes a long way in already boiled and peeled eggs. Just an hour puts the smoke flavor on them. That being said I’ve done them this way and then pickled them and I feel like you really lose a lot of the smokiness when you pickle the eggs. Eggs that have a lot of smoke flavor seem to have a lot less when pickled. So maybe a longer smoke helps.

Eggs were boiled, peeled, and cold smoked.

Good luck!

I’ll be waiting on your findings.

I love pickled eggs!
Hard Boil em, Peal em, Smoke em, then Pickle em.
If air doesn't get through the shell and membrane, smoke won't. ;)

PS: You grind those shells up and put them in capsules, there's your calcium supplements.

thank you all! I dont know how i missed all these links previously but thanks for your help.

This thread can be removed if need be I see now the info is out there, my apologies.

I too have this problem I either have smoke flavor or pickled never both I’ve noticed the same when adding jalapeño or other heat. The pickled trumps everything I’ve tried
