Saw a recipe I wanted to try from you tube, so I started with about a 3lb chuck roast seasoned it up with s&p threw it on my Wsm with royal oak and apple wood chunks about 275 300 for a couple hours. Then it was time for it to go hang out in the dutch oven with a stick of butter, au jus mix, pepperoncinis with some juice, and let it go for another couple hours at the same 2750-300....turned out pretty good should of let it go maybe another 30 to an hour pulled it al like 206

I don't know about letting it go longer. It looks pretty good like it is :-)
I think it could of been more tender than it turned out but I was still pleased with the taste and how the dutch oven worked out was my first time using this besides seasoning
