I was trying to use up all the leftover smoked chuck roast from earlier in the week, and I wanted something different from the previous two sandwiches I made. So I made something that will probably trigger the Philly cheesesteak purists, but trust me this was a great eating sandwich.
Hoagie roll with mayo, topped with bacon, thin sliced smoked chuck roast, onions, mushrooms, red and green bell peppers, Swiss cheese, and smoked cheddar, with a drizzle of BBQ sauce that had previously been thinned down with the jus from the French dip cook. The meat was reheated with a splash of soy sauce and a splash of the leftover jus, then cooked until the bottom was browned and a little crispy.
The onions, peppers, and mushrooms were cooked in a bit of scallion oil with salt and pepper.
