Smoked Chicken Thighs (Hickory Smoke)

I have been using a brine on my chicken thighs with good success.
Sea Salt, and Thai Basil and some Thai Chili sauce and bit of fresh garlic.

the last ones were smoked with mulberry wood.

Gonna try your trick of putting the AMPS on the bottom rack. I've placed it on the floor of my 40" MES, but haven't gotten as much smoke flavor when I do that.

I'll let y'all know how it goes.

It depends on which generation MES you have.

Best places I've found:

Gen #1----On the support rods in the bottom left, next to the chip burner assembly.

Gen #2----Remove the little water pan from the slanted drip plate, and straddle the hole left by the removal of the water pan.

Gen #2.5----Put bottom rack in & put AMNPS on right end of that bottom rack. Use Chip dumper to allow more or less air flow.
