Decided on something different for week 1 kickoff this year. I just got this Trompo King so this fit right in. Chicken shawarma on the Trompo King spit smoked in the Lang with cherry wood. 10 lbs of chicken thighs marinaded overnight in a homemade marinade. Smoked to about 180 at the inner most area of the stacked meat. Shaved onto low carb wraps with traditional accompaniments. Garlic spread, cucumber, tomato, pink pickles (pickled turnips), harissa tahini sauce and a little parsley. Served with a side of halloumi fries. Definitely has been too long since I’ve had these flavors. It was a hit, friends and family devoured it. I’ve been told I’ll be doing this meal again.
