We had some smoked chicken leftovers and I wanted to do something different so I made these.



Green chiles, smoked chicken.



4 blend Mexican cheese.



All fried up.



# 2.


A taste for Carol with some salsa. When I came back in she had another, so they must be good. I wish we had some sour cream or guacamoli, oh well.
Fast, easy and a good change up for leftovers.

Enjoy, if you try them.

Quesadillas...I never seem to have 'em often enough...the textures and flavors are just a nice treat for me. Smoked chicken? Oh yeah!!! Got my # on that one...

You've got that right Ron, smoked chicken leftovers make GREAT quesadillas and yours looked mighty fine too!
 
I used mild chiles so they were tame, we don't do hot here.

As luck would have it I pulled the meat off some thighs last night and have tortillas and cheese in the fridge.
Have to get some chiles from the garden and make a sauce cause now I want one of those.
 
Definetky a good idea there Ron. I like the use for leftovers.
