Smoked Boneless Turkey Breasts- 4 ways

Found whole turkeys for $0.39 pound and BOGO. Bought 2 -20#'s for $8.31 total! Pulled breasts out and started the thinking. These are currently in the smoker. Had to tie these fellas up for an even cook. First time with that. Not beautiful but functional. Think I may hold and slice in a few days for lunch meat.

The prep:
#1) Cajun- Cajun rubbed; injected with butter and cajun seasoning.
#2) Garlic and Herb- My basic poultry rub; injected with Tony's Garlic and Herb Injectable
#3) BBQ- My basic rub, injected with butter, honey, rub ---- basting with Sweet Baby Ray's
#4) Peppered- Course Ground Black Pepper, smidge cayenne, onion poweder, garlic powder and salt; injected with Fine ground pepper and chicken stock

Into smoker at 235* on the grates; had a slight hiccup and a little oven time (smoked wire on element-FIXED), and back in smoker. Will update when done.
 
Looking good. I am with you and in middle of smoking a bone on turkey breasts.
Brine overnight and herb butter rub under the skin. Can't wait to dig in.

In for the ride. We love smoked turkey breast. My freezer is packed or I’d have grabbed some sale turkey. Saw a lady yesterday that had 10 whole turkey in her cart.

Thanks all! Breasts in and done well. Will post pics after slicing. Few for wife and friends tonight. I don't have any freezer room so in coolers till I could pluck em. Big freezer and I woulda pulled ten also!

Finished and sliced. Pretty good overall. BBQ was best. Would go heavier on spice and brine next time. Not dry but couldn't feel the lunch meat style wet.
Hit freezer for 4 hours. I don't know if the turkey needed that. Might not freeze next time.

New to smoking turkey breasts here. Did you smoke them with the skin on, or did you remove the skin ??

And what type of string did you use to tie them up ??

I want to learn to do turkey breasts in my smoker. I'm getting tired of paying $20/lb for smoked turkey breast at my local BBQ joint.

Sorry I haven't checked in for a bit. I boned out the breasts so no skin. I just used butcher string from Amazon and went to town. I enjoyed the look and taste of the skin on bone in, but wanted these to be easy to slice. Good luck!
