Had the day off yesterday & decided to do some ribs & beans. It had been awhile. I got up early & got the membranes off & rub applied. Then I made a batch of Big Bob Gibson's Championship Red sauce & put my beans together. Then everything went back into the 'fridge until early afternoon. When the time came, I used apple wood for both the ribs & beans. I didn't really do anything different than I normally do, but they turned out better than any other ribs I've ever done. They were just on the edge of being FOTB. The sliced leftovers (pictured) will be lunch today at work & I'm already ready for that!

Thanks guys. Sorry it took me so long to respond, but it's been really busy 'round here. I didn't think there was anything special about these ribs when I unwrapped them & started prepping, but they really surprised me with how good they were. I had some for lunch both Friday & Saturday. The whole break room at work smelled like a smokehouse when I was nuking them up!
