About 1 hour to go on these lip smacking goodness called Maple Syrup candy smoked salmon.

Well took 8 hours exactly. Figured on 6-8.
These will sit in the fridge over night to dry up some and get firmer before vac sealed.

Yes for Atlantic salmon to give such bright red colors is amazing from this recipe that I use.
The best salmon to use is Copper River salmon but the cost is unreal for the average guy to buy and have shipped. Copper River salmon are very red to start with. On a score of 1 to 10 I would give them a 10 plus. :emoji_fish:
 
Can you post your process?
Nothing special really. Been using this recipe from the Bradely forums for many years. People change it up to their taste but this has worked for me. The last hour or so I keep brushing on the Maple Syrup Giving it a few good coats. Once in the fridge over night it hardens up so its not a sticky mess.
