This is probably going to depend on your smoker and personal preference but how long do you apply smoke during your cook? Me personally just the first half of cook time.
This is true you can make chicken taste like anything:)I think it depends on the cut or type of meat your smoking. Chicken for example takes the smoke flavor very easily where a Boston butt requires more. With chicken i add smoke every 45min to an hour. Usually mesquite. But when i smoke a butt...especially a larger one...i try to keep a low smoke with cherry or hickory on it for the whole duration.
