Smoke/Fried Wings?? Updated with Wing-View.

Here is my plan for this afternoon. Season and smoke wings at 250* fror ~1.5 hours, Then into the fryer until crisp. I'm going to do this for 1/2 the wings, the other half, I'm going to Vac Seal and into the freezer after the smoke. I figured this way, I can defrost when ready for more wings and just toss in fryer to finish. Smoke/fried instant wings for the future.

I will probably put the wings into frig shortly after pulling from the smoker to cool quickly since they are only partilly cooked. Then into the vac seal and freezer.

Does this sound like a plan??

Allright, here's how it went.

Prepped and ready. Greek Seasoning and Cayenne.


Onto the smoker at 250* using mesquite chips and chunks, smaller pieces on bottom, drumettes on top.


After 1.5 hrs. I pulled half of each type to fry. Half to cool and freeze.


Dusted with just a sprinkle of flour/salt/and pepper for a little crunch. (I almost forgot to take a picture, pieces already in the fry-granpappy.)


The finished product. These were excellent!!. I fried the pieces for ~4 minutes, 5 minutes for the drumettes. The half I pulled for the freezer didn't make it that far, they are in the frig to be fried later this week. To good to put away for long! I will update on how those turn out after chilling for a couple of days. Thanks for looking.

Did you ever fry the wings that you chilled or froze?  If so, how long did you fry them and at what temp?  I've been wanting to try this as well.
