Nice Spares with Banana Ketchup and Jamaican Firewalker Rub, Dizzy Pig BBQ Co.


It Tastes just like ketchup, but Banana-ie

I have just foiled them, I gave them a splash of pineapple juice with a splash of coconut rum.


Smoking peppers from the garden, they are off now and they smoked crispy and I have crumbled them into chile powder.

We are also having a Savannah, Ga delicassey.
The Low country boil.
Shrimp, crabs, smoked sausage, potatoes and corn on the cob.

You add from left to right; banana peppers, pepper, lemon,2 T. slap yo mama spice, 2 beers, 1/2 c cider vinegar, 1/2 onion, salt(enough to make it salty like the sea, add it last), 10 shots of worchestershire, 1/4 C. chipotle hot sauce(local VA, Birchmier). the front row; dried garlic, fresh garlic 1/2 head, 1/3 C or more old bay.then water to fill the pot 3/4 full. The boil should be ocean salty, and make you cough from the spice.

start the potatoes in the boil cold, then when they are 3/4 tender, add the sausage, when the potatoes are just about done add corn and crabs, boil 5 minutes, turn off and add the shrimp, and put a lid on it for 5 minutes.

Drain it and serve it outside, for big parties just dump it on newspapaer.
serve it with garlic butter, cocktail sauce, tartar sauce, and old bay.

don't forget the beer.
I will post more pics as things finish up. Hopefully we will have ribs finished by 3, and the boil will go about 4 or5.

They are out of the foil now, and I am glazing them with brown sugar, molassas, and water.
there is little bits of pinapple glazed in the bark.

I have been trying to resize, on PB it says it is large format, but this is what I'm getting. I'll keep trying.

oh I forgot...
The Ribs were really interesting. very tropical and caribbean. the coconut, banana and rum flavors really came through, but wern't overpowering. the molassas glaze was sweet and sticky with out being cloying. all &all a good experiment.

we are running late on dinner, but there will be boil pics, I promise.
 
Here is the Low Country Boil, the potatoes are 75% done. add the sausage!




Add the corn and blue crabs if live, set timer for 5 minutes. I couldn't get blue crabs of good quality.

Add the shrimp and any cooked crab parts. turn off the heat, mark the timer for 5 minutes more.


remember to save some broth before you dump it into a strainer.
good stuff.
