Hey All,

I am wondering what other people do when doing either a long smoke or a cold smoke in their Trailmaster.  I am looking to smoke some pork bellies (bacon) and cheese.  So I am wondering what people do to cold smoke in the Trailmaster.

Conversely, I also want to do some brisket and other large meat smokes that take 12+ hours.  I find that I need to tend to the fire box about every 45 min to hours and a half (depending on charcoal to wood raito).  Anyway, I am wondering what other people do to start a smoke before bed, and maybe only get up once in the evening.  Or should I just get/make an electric smoker with a pellet auger?
