So I thought I had plenty fat in ground brisket when I made it. Could of used more. Next time all fat goes back in.

Looks tasty anyway Brian. I’ve seen people say to weigh the lean and fat to get the ratio you desire. I prefer 80/20 for burger.
 
By the way did you see that sugar free keto Chocolate silk cheesecake in a peanut butter cookie crust too with cookie crumble and a peanut butter glaze I posted. That bad boy would keep you on track and is decadent. I have people begging me to make them for sale lol.

I agree looks great . I have one thawing to grind . I get rid of the hard fat , then grind all the rest .

I did try that lemon cake but that almond flour is just not for me. Everything I have tried with it ends up in the trash. Ended up making my lemon pie. That cheesecake looks good.

Great looking burger, I grind my brisket burgers with a lot of the fat. In my opinion it just makes a better burger. The last batch I made I used 3 1/2 lbs brisket & 1 1/2 lbs of pork belly. They were excellent, but not something you would want to eat all the time. Maybe one a month! Definitely not health food!

No flour in the cheesecake or crust. I’ll send you the recipe. I owe it to someone else too.
 
Took one for lunch today. Petty good. As you can see them on the griddle nothing coming up through the holes like it does with 80/20. Gonna try SmokinAl SmokinAl meatloaf with it. Hopefully enough fat in sausage to make up for it.
