Appreciate it, Robert! I almost didn't post this cook but got to thinking about the times I have seen people struggling with small pieces of brisket and thought there might be some benefit to posting it.
 
Good info, I have a small flat sitting in the freezer that I have been moving around, May need to put it on soon.
