Hello All!

This was a very interesting day for smoking brisket. First off, this was a small 2.5lb brisket flat I picked up at the local grocery store. Threw on some Worcestershire sauce then applied my rub early this morning. Preheated my smoker and threw on the brisket. Next thing I know I realize I'm out of wood chips! With the briskets IT rising fairly quickly, I ran to the store and picked up some hickory. By the time I got the fresh chips in there I had lost that crucial time to build a good bark. Wrapped at IT 160 with beef broth/worcestershire and pushed on til IT 199. Turned out good and tender but missed that nice bark. Also, first post on SMF!

Looks like a sweet brisket flat you got there.
