slim jim question

When I normally make my slim jims I just use 80/20 gb,as the weather has changed and. The humidity has left is my sticks seem to be on The dry side, so I have started adding some ground pork to thr mix. Has any one just used 70/30 gb and how does it turn out ?
 
Just a thought, water in bowl in smoker after 1hr or so of drying period?? How do let them bloom when they are done?? I put them in brown paper bag in fridge after blooming on counter for a hr or so just some one told him that and that is what i do seems they dont dry out so bad in fridge before i vac pac them - could be a mind thing for me thou. No humidity her in Idaho so that is why I use pan I Know a lot of people dont but if you do 5lbs or something you might want to give it a try.

Pork will help or just add a little pork fat. Sometimes slowing down the smoking temps gets you over the drying out part. Takes longer but helps the texture. I think beef from an older animal sometimes causes a drier texture and you have to up the fat.
 
Ikrus, evening..... Do you add something like soy protein to the meat ??  That seems to hold the moisture and fat....  I do and add half of what the directions call for so the meat doesn't get that "biting into rubber" texture.... using 70/30 is OK to me....  and smoke at as low a temp as you can get away with like woodcutter suggested...and driedstick has a good point of blooming in a paper sack .....   Dave

Good morning guys , to answer some questions .. I have tried adding a water bowl to the smoker and no I don't add any soy protein or any thing I use. #116 mix. Cure, ECA

You can use 70/30 gb but watch for a fat out if your temps get to high. I been using some sure gel and finding this is working better than a spc type of binder. Make a normally semi dry sausage a tad moist.

Ingredients:  Hydrolyzed protein from milk and geletin (for flavoring), sodium phosphate 33.33%
 
The reason I ask. Is. Because the price of 80/20 is getting crazy at 3.79 lb and i seen some place advertis e 70/30 for 1.78
