Super tender cheeks. Smoked for bout 2hrs with mesquite. 2-3hrs wrapped in banana leafs till 203.
Finished with tons of fresh vegetables jasmine rice and wife’s homemade Thai chili sauce.
Little update. Added another intake and exhaust. Bought a stainless vortex accessory off of amazon. I placed the vortex in a wok with room for the ash to fall. This UDS is very versatile now. Very pleased.
